Hectic Fall, Easy Chicken and Biscuits Supper

Wow, this is only Jane’s second week of kindergarten and I already feel beat!  At the end of the day between picking her up and taking her to extra curricular activities after school, I am going crazy trying to still have time to prepare a nutritious dinner for my family.  And if you know me, fast food is not an option. 
If you feel like you too cant find the time, don’t feel bad. . . its hard.  To help make things easier on you, I have put together a super quick and easy recipe that you can throw together in about 5 minutes. 
Stove Top Chicken and Biscuits
Store bought rotisserie chicken
1 can cream of chicken soup
1 bag mixed vegetables frozen
1 can refrigerated biscuits
This is really simple. . . first add your soup to a large deep skillet on medium high heat. 
Add 1 soup can of milk to the skillet and your bag of frozen veggies. 
Bring to a boil and reduce to a simmer.  Cover and simmer for about 5 minutes or until frozen veggies are cooked.
In the meantime cook your biscuits per the directions on the container and pull the chicken from your rotisserie and shred.
Add shredded chicken to your skillet and heat through.
Serve your skillet chicken mixture on top of warm biscuit’s.  Salt and pepper to taste.
That’s it. . and my Dick and Jane loved it.  They cleared their plates!  Even though time is sparse, I can still feel good about giving them a healthy dinner.  Goodness knows that they need it after their long day at school.

Back to School No Bake Granola Bars

Over the years I have found that you can easily make at home anything you find pre made at the stores while saving money and cutting out unnecessary preservatives.  Today we decided to make Jane some tasty homemade granola bars to take to school with her this week for snack time.  Follow along and I will show you just how quick and easy these are to make!

Here is what you will need:

– 4 tbsp. unsalted butter
– 1/4 cup packed light brown sugar
– 1/4 cup honey
– 2 cups plain granola
– 1 cup rice krispies cereal
– 1/4 cup chocolate baking chips
– 1/4 cup peanut butter chips
– 1/4 cup marshmallows
1)  To begin, line a baking pan (I used a 9 x 13) with aluminum foil and lightly coat with baking spray or butter.
2) Combine your butter, honey and brown sugar in a large saucepan on medium heat. Stir until butter is melted.
3) Bring the mixture to a boil on high heat , then lower the heat to a simmer for about 2 minutes.  You just want the sugar to cook out of the mixture.
4) Remove the mixture from the heat and stir in your granola and rice krispies cereal.
5) Spread the mixture out into a pan (Just like rice krispies treats) and gently push down.
Quick Hint:  The pan I used ( 9×13) was too big, so I just brought the sides of the aluminum foil up until I got to my desired thickness.
6) Sprinkle on your toppings and press them so they stick into your mixture.
7) Allow your bars to cool about 20 minutes then cut them into strips.
8) Store them in a container separated by wax paper or wrap them individually for on the go deliciousness!
