Easy Made Boston Creme Pie Recipe

So a couple of days ago I spilled the beans to my friends on Facebook that I was going to start a new recipe series here on my blog – and I couldn’t think of any recipe series more deserving of that spot than pie! I mean, I love pie – I especially love my mom’s homemade pie. You know the ones she would spend an entire day making for my sisters and I from scratch? I can remember watching her in the kitchen – she would get out a rolling pin and break down the graham crackers into little pieces by hand. Then she would use the graham cracker pieces and butter to make a homemade crust. I would love to say that I also take the same time to hand craft my pies – but it just isn’t so. I usually just go with the pre-made crusts. It’s easier, but probably not as fun as using the rolling pin to beat the graham crackers to bits on the counter. Maybe mom had something going there. . .

So, as you will notice,  today I am going to make some good ol’ fashioned yumminess with a few new school luxuries – like pre-made pie crust and instant pudding. What can I say? I am a busy woman and I wanted to eat pie –> today.
So for my first recipe, I decided to re-create one of my all time favorite pies : Boston creme pie.

Cue the drool.

Easy Made Boston Creme Pie

1 pre-made graham cracker pie crust (or you can make your own if you’re fancy)
pie filling:
1 box vanilla instant pudding (cook or no cook – doesn’t matter)
3 cups of milk – or per pudding instructions

1 & 1/3 chocolate chips
1 cup heavy whipping creme

Begin by preparing the pudding according to the box instructions. Once prepared, pour it into the pie crust and chill until firm – about 2-3 hours.

Once the pudding has set, prepare the frosting by heating one cup of heavy whipping creme on the stove top over medium low heat just until it simmers – stirring constantly. Once the heavy creme starts a simmer, remove it from the heat and pour it directly over 1 & 1/3 cups chocolate chips – make sure you have them ready in a heat safe large bowl. Cover the bowl with a lid (or another bowl) and leave it alone for 5 minutes. After 5 minutes – slowly whisk the chocolate until it starts to thicken. Once thickened and combined – leave the mixture to cool for 15-20 minutes at room temperature.

After 15-20 minutes, pour the chocolate Ganache frosting over the pudding and refrigerate until ready to serve. The frosting will continue to thicken as it cools – mine wasn’t completely set until 4-6 hours later in fridge. But it tastes good at any point!

I added a few more crushed graham crackers to the top and we enjoyed a slice of homemade Boston Creme Pie on the front porch after dinner. It had just the right about of “cool” after the hot summer day. Mmmm…

We’re trying to decide which pie to make next! Tell us your favorite in the comments!
