This week I found a new product in the stores: Stonyfield Greek yogurt in thirteen new flavors! Notice the Cafe’ Latte one. Yep, you gotta try this #StonyfieldGreek! I grabbed up two of each new flavor. Some to eat just as is and some to cook with. I regularly use Greek yogurt to substitute for butter or mayo in my recipes just because the recipes still end up tasting great and they are a bit healthier for me and my family. Plus, Stonyfield yogurts are USDA Organic. <– I really love that.

One of the recipes that I use Greek yogurt substitutions in the most is cookies. The yogurt instead of the butter really makes the cookies more decadent and fluffy. BESIDES, then I can tell myself that I am really not cheating on my diet when I eat two or three. Well, that’s not entirely true. I don’t “diet”. I do, however, try to be conscious of how many sugars, ect I eat in a day. So. . I’m for this example I am calling that a diet.

Speaking of guilty pleasures, one of my other “I gotta have” issues is coffee. Not just any coffee though, caramel lattes. {mmmm} So you can imagine my excitement when my eyes focused in on the new Stonyfield Greek in Cafe Latte flavor. I immediately grew a devilish look on my face as I thought about what amazing cookies I could make out of this new flavor. I may have left the yogurt aisle letting out a devilish laugh as well. Not really sure, but just in case I may need to switch grocers.

Anyways. . as you may have guessed by now I decided to try and bring together my two favorite treats: chocolate chip cookies & caramel lattes. Before you get too excited though I must warn you. These do taste pretty darn good, however, being that I like my coffee STRONG these were lacking for me in the coffee flavoring. So while you are all reading this and testing out the recipe out for yourselves, try and think of a way to strengthen the coffee flavoring. If you come up with something please let me know. It would make me super happy!

So what you need to know when exchanging Stonyfield Greek yogurt for butter in your cookie recipe is that 1 cup of butter = 1/2 cup yogurt + 1/2 cup butter. You can view a complete substitution chart here.

For this recipe I decided to try out a chocolate chip cookies recipe from the French Press blog. I ran across it one day while browsing Pinterest and thought that it sounded good. I of course have my own way of making chocolate chip cookies, but I like to try out other bloggers recipes from time to time to see if maybe they are doing something better. Its always good to try something new. 🙂

I was right. It was good. However, for this particular post I decided to change things up a bit from the original posted recipe. After all, I was after something a little bit different than a standard chocolate chip cookie. I was going for something that melded my two guilty pleasures. So let me share with you how I changed things up a bit on this one.

Here is what I did.

Ingredients:

2/3 cup Stonyfield Greek yogurt in the NEW Cafe Latte flavor
2 1/3 cups flour
1 tsp. baking soda
1 tsp. salt
2 eggs
1 cup brown sugar
2 tsp. pure vanilla
1/2 cup pure cane sugar
12 oz. bag of chocolate chunks
1 bag of baking caramels

Directions:

Begin by pre-heating your oven to 375 degrees.
In a large bowl combine your wet ingredients first until well mixed.
In a separate bowl combine your dry ingredients.
Slowly mix your dry ingredients into your wet ingredients.
Lastly, stir in your chocolate chunks just until mixed in.
Cover a cookie sheet in parchment paper and place small 1/2″ balls of dough onto the pans.
Place one baking caramel on top of each cookie ball and cover with another 1/2″ ball of dough.
Squish them together.
Bake the cookies for about 8-12 minutes or until the corners slightly brown.
I usually end up burning mine, but that’s how my mom did it too so it’s strangely comforting. 
Allow the cookies to cool on a parchment paper covered cooling rack.

They are ehwy gooey and delicious! I hope you like them too. Oh, and remember. . think about ways we can increase the coffee flavoring. If you think of a way, let me know. 
Oh and P.S. – Speaking of things “You just gotta try”, I am thinking about taking up a new hobby: Restoring my own vintage car. Ha! I’ve already bought it and I think I am going to have to get in there and let the boys teach me a thing or two about mechanical and body work. Of course I am going to have to dress the part to do this. . overalls, bandanna, grease on the cheeks. Don’t worry. I’ll take photos.
